Summer Mustard Albert Bartlett Potato Salad

Takes about 15 minutes, is extremely tasty and only uses 2 bowls. What's not to love?!

Cooking PotMETHOD

  1. Cut the potatoes into bite size pieces and boil in unsalted water until coked through but retaining their shape. Set aside to cool.

  2. In a large bowl, mix all the other ingredients, then add the slightly cooled potatoes, stir well to coat and serve.

500g of Jersey Royals or Cornish King Potatoes
Washed and thinly sliced radishes
1/2 of a cucumber (washed and thinly sliced)
Small handful of Chives (washed and chopped)
2 tbsp wholegrain mustard
200ml low fat crème fraiche
