Roasted New Season Potatoes with Tomatoes and Balsamic Vinegar

For the perfect partner to a summer night's barbeque.

Cooking PotMETHOD

  1. Pre-heat the oven to 200° C

  2. Wash the potatoes - but don't peel them!

  3. Parboil for 5-6 minutes until cooked through but still firm.

  4. Drain and place on a baking tray along with some plum or cherry tomatoes.

  5. Drizzle with Extra Virgin Olive oil, balsamic vinegar, black pepper and some fresh basil if you have some or mixed dried herbs.

  6. Pop into the oven and roast for 30 minutes until nicely golden.

6-8 Albert Bartlett Jersey Royal Potatoes
10 small plum or cherry tomatoes
2 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
Freshly ground black pepper
Handful fresh basil or 1 tsp mixed dried herbs
