Jersey Royal Mega Mix Potato Salad

Great way to use up veggies and be healthy this summer!

Cooking PotMETHOD

  1. Wash and boil the potatoes for 20 minutes or until cooked through.

  2. Allow to cool slightly before chopping the larger potatoes in half and adding to a large serving dish.

  3. Add the chopped chives, chopped parsley, chopped mint, diced cucumber, chopped spring onions, olives and shreaded gammon or cooked chicken.

  4. Next add a big glug of Extra Virgin Olive Oil, sprinkle of sea salt and the lemon juice.

  5. Mix well and serve.

Serves: 8

Cooking: 20 mins

1/2 bag of Jersey Royal Potatoes
Handful of chopped chives
Handful of chopped parsley
Handful of chopped mint
Half a cucumber (diced)
Bunch of spring onions (chopped)
Handful of chopped green olives
Shreaded gammon, (or if you prefer, ham or cooked chicken)
Big glug of extra virgin olive oil
Sprinkle of sea salt
Juice of 2 lemons
