Duchess Potato with Spiced Sausage and Peppers

Best with Creamy or Smooth potatoes

Cooking PotMETHOD

  1. Take the mashed potato whilst still warm, add the seasoning, butter and yolks, mix well until smooth.

  2. Place this into a piping bag with a large star nozzle. Pipe onto a non-stick tray circles the shape of a thick doughnut with a hole in the middle.

  3. Take the skin off the sausages and make into 4 balls that fit into the hole of the potato doughnut.

  4. Bake in an oven at 200°C for 15mins. The sausage meat should be cooked and the potato golden.

  5. Finish with peppers that have been peeled by burning the skin and then cut into strips.

2 tbsp butter
4 egg yolks
sprinkle of salt and pepper
sprinkle of nutmeg
4 spicy sausages
1 green pepper
1 red pepper
1 yellow pepper
