Baked Potato with Grilled Meat Skewers served with Spicy Brazilian Beans

Perfect summer grub!

Cooking PotMETHOD

  1. Preheat oven to 220°C / 425°C / Gas Mark 7.

  2. Prick potatoes with a fork and place directly onto the oven shelf and bake for 60-80 minutes. A metal skewer inserted lengthways into each potato will speed up the cooking.

Filling:

  1. Make a meat marinade by mixing together 2 crushed garlic cloves, 1/2 teaspoon chilli flakes, 1 tablespoon tomato puree, 1 teaspoon smoked paprika, zest and juice of 1 lemon.

  2. Add diced turkey breast, cut into 1 inch chunks and add to the marinate and leave in the fridge for a couple of hours or over-night if you have time.

  3. Skewer the marinated meat with pineapple chunks and red or green pepper.

  4. Grill or BBQ until cooked right through and nicely golden.

  5. Serve with the baked potato and shop-bought mixed spicy beans for a simple, heart healthy summer dish.

4 Large Albert Bartlett Original Rooster Potatoes
2 crushed garlic cloves
1/2 tsp chilli flakes
1 tbsp tomato puree
1 tsp smoked paprika
Zest and juice of 1 lemon
350g diced turkey breast
Small tin pineapple chunks
1 red or green pepper
1 tin mixed spicy beans
