Pre-heat oven to 200c, gas mark 7.
Wash the sweet potatoes, then cut them into wedges of roughly the same thickness so that they cook evenly.
Pat the wedges dry, then put them into a bowl, coat with olive oil, and season to taste. Mix thoroughly.
Spread the wedges in a single, even layer onto a baking tray on the middle shelf of the oven, and cook for around 40 minutes, turning once.
These sweet potato wedges are just as easy to cook on a BBQ wrapped in foil!
