Wash your Albert Bartlett Rooster Potatoes, slice them into chip shapes, and add them to a bowl.
Melt the butter in the microwave for 5 seconds at a time until fully melted.
Finely chop the garlic cloves and parsley.
Coat the chips with butter and truffle olive oil. Add the chopped garlic, parmesan, chilli flakes, parsley, salt, and pepper. Give them a good shake to make sure the chips are fully coated and transfer to a greased roasting tray.
Roast for 35 minutes at 200 C making sure to turn them half-way through.
Garnish with some more parmesan and parsley and enjoy!
