Pre heat oven to 200 C / Gas 6.
Scrub the potatoes under cold running water.
Place into a saucepan, cover with cold water and bring to a simmer. Cook gently till potatoes are nearly cooked.
Cut the chorizo into 5mm slices.
Roughly chop the garlic
Drain the potatoes and leave to cool slightly.
Heat a roasting tray over a medium high heat, add the olive oil, add the potatoes and turn over in the oil for a few minutes. Add the chorizo and garlic and place into the oven. Cook for twenty minutes, remove the dish from the oven and with the back of a fork lightly crush each potatoe, just enough to break the skins.
Leave the potatoes to soak up some of the oil for 15 minutes.
Mix the chopped coriander leaves with the sour cream.
Transfer the potatoes onto a serving dish and spoon over some of the sour cream.

250g Chorizo
4 cloves of garlic
50ml olive oil
Pinch of salt & pepper
4 tbsp sour cream
2 tbsp chopped coriander
