Pre-heat the oven to 180°C.
Place the fish on a large piece of thick foil and bring up the sides to form a parcel.
Drizzle over a tablespoon of olive oil, some freshly ground black pepper and a small pinch of salt. I also love the flavour of lemon thyme so have added a sprig of this and a slice of lemon.
Add a couple of tablespoons of white wine and seal the parcel leaving space inside for the steam to move around.
Bake in the oven for 15-20 minutes depending on how thick your piece of fish is.
For the potatoes, wash the Jersey Royals but don't peel them.
Boil for 6-8 minutes until cooked through and drain.
Once cooked, drain and mix together with a spoonful of Sacla pesto - classic Basil or sundried tomato, as you wish - and serve.
