Rub the potatoes with a little oil, salt and pepper. Places in the oven at 200c.
After an hour, they should be cooked (soft in the middle). Transfer them to a plate and use the back of a fork or spoon to apply a little pressure. Just enough to start to crush each potato but not complete, just so the flesh starts to come out.
Sprinkle over some of the lettuce, gherkin and pastrami.
Add the Emmental cheese and then place back in the oven for a few minutes to melt.
Remove when melted and add further lettuce, gherkin and pastrami.
Give it a little squirt of mayo and American mustard.
