There is no need to peel the Apache potatoes. Just rinse them and steam or boil them whole for 20 minutes until tender.
Drain off the water and tip into colander or sieve.
Now it should be easy to push off the potato skins, because after cooking the potato skins will slip off easily.
Pass the potatoes through a potato ricer if you have one, or mash until smooth.
Beat in a large knob of butter.
Serve and enjoy.
