Preheat the oven to 200°C/Fan 180°C/Gas 6.
Wash the potatoes.
Sit a potato snugly between two chopsticks. Cut slices that go around 90% through the potatoes or until you hit the chopsticks, being careful not to cut right through. Repeat for all the potatoes.
Place the potatoes into a baking tray, coat their outsides with enough oil so that they don’t stick.
Crush the garlic, finely chop your herbs and mix with the butter.
Spread the mix across the top of each potato. Prepare the pigs in blankets on a lined baking tray.
Bake the potatoes for 30-45 mins, until soft and tender. Cook the pigs in blankets until golden.
Season to taste with salt and pepper.
