Preheat oven to 200C.
Keeping each potato whole, thread a wooden skewer through the centre from bottom to top.
Using a sharp knife, start at one end of the potato and cut a continuous spiral until you reach the other end, without cutting through the skewer.
Gently pull the potato open along the skewer to reveal the spiral. Repeat for remaining two potatoes.
Finely slice the garlic and mix it in with the olive oil.
Lay the potato spirals, still on skewers, on a baking tray and brush with the oil and garlic on all sides.
Sprinkle each with smoked paprika.
Bake in the oven for 40-45 minutes until cooked through with crisp edges, then serve whilst still hot.
