Take the mashed potato whilst still warm, add the seasoning, butter and yolks, mix well until smooth.
Place this into a piping bag with a large star nozzle. Pipe onto a non-stick tray circles the shape of a thick doughnut with a hole in the middle.
Take the skin off the sausages and make into 4 balls that fit into the hole of the potato doughnut.
Bake in an oven at 200°C for 15mins. The sausage meat should be cooked and the potato golden.
Finish with peppers that have been peeled by burning the skin and then cut into strips.
