Potato and Goats Cheese Tortilla

This tasty tortilla is a great variation of the Spanish classic.

Cooking PotMETHOD

  1. Preheat the oven to 200°C or Gas mark 7.

  2. Parboil the potatoes and cut into thick slices.

  3. Beat the eggs and milk together.

  4. Heat the oil in a heavy bottomed frying pan, add the potatoes and fry until the potatoes are lightly coloured.

  5. Pour in the egg mix, break the goats cheese into walnut size pieces and place on top of the eggs and potatoes.

  6. Sprinkle over the spring onions and place into the oven for 25 minutes.

  7. Turn the tortilla out and serve hot or cold.

This tastes great with a tomato and basil salad drizzled with good olive oil.

4 medium sized Albert Bartlett Original Rooster Potatoes
4 large free range eggs
100ml milk
200g goats cheese (also tastes great with Boursin or mozzarella cheese)
6 spring onions
2 tbsp oil
Salt and pepper
