Oven Baked Cod with Pesto Jersey Royals

Super healthy and delicious!

Cooking PotMETHOD

  1. Pre-heat the oven to 180°C.

  2. Place the fish on a large piece of thick foil and bring up the sides to form a parcel.

  3. Drizzle over a tablespoon of olive oil, some freshly ground black pepper and a small pinch of salt. I also love the flavour of lemon thyme so have added a sprig of this and a slice of lemon.

  4. Add a couple of tablespoons of white wine and seal the parcel leaving space inside for the steam to move around.

  5. Bake in the oven for 15-20 minutes depending on how thick your piece of fish is.

  6. For the potatoes, wash the Jersey Royals but don't peel them.

  7. Boil for 6-8 minutes until cooked through and drain.

  8. Once cooked, drain and mix together with a spoonful of Sacla pesto - classic Basil or sundried tomato, as you wish - and serve.

Substitute cod for any white fish on special offer!

1 bag of Jersey Royal Potatoes
2 fillets of white fish
1 tbsp extra virgin olive oil
3 tbsp white wine
Freshly ground black pepper
Small pinch of salt
2 sprigs of lemon thyme
2 slices of lemon
2 tbsp green or red pesto
